Varieties: Tempranillo – Garnacha 50:50.

Appellation of Origin Navarra.

Subzone: Valdizarbe.

Made of grapes from 25 year-old vineyards, located at 450 meters  altitude, on a clayey and stony soil.

Garnacha: 5 days cold maceration.

Total maceration: 18 days.

Tempranillo: 5 days cold maceration.

Total maceration: 15 days

Clarification, infiltration and conventional cold stabilization before bottling.

Low levels of sulphites.

 

Food pairing

Ideal with oriental meals, rice, oily fish and red meat.

Serving temperature: 14 – 16 °C.

Tasting notes

Visual phase

Cherry red colour with violet-shaded rim.

Nose

Good intensity with notes of red fruit (ripe redcurrant and blackberry) and floral notes, violets and lilacs.

Palate

Warm palate with hints of cherries in liqueur, floral and balsamic retronasal.
