ViñOXs – Innovative itineraries in oxidative aging of Galician wines AGACAL

ViñOXs is a pilot project led by the winery Paco & Lola, aimed at exploring and validating innovative oxidative ageing protocols for Galician wines. In contrast to the conventional model of reductive ageing in stainless steel, ViñOXs opts for alternative materials such as granite and concrete, seeking to produce wines with differentiated sensory profiles and high added value. This approach aligns with current market trends that prioritize authenticity, innovation, and sustainability in the final product.

The main goal of the project was to identify and validate oxidative ageing protocols specifically tailored to Galician grape varieties—mainly Albariño (white) and Sousón (red)—using alternative vessels. It also aimed to ensure food safety, minimize environmental impact (through life cycle assessment of materials), and evaluate the technical and economic feasibility of these new practices under real winery conditions.

Over two consecutive vintages (2022–2023 and 2023–2024), 12 oenological itineraries were designed and implemented, adapted to each material type and ageing duration. Wines aged in granite and concrete showed more mature sensory profiles in less time, while those aged in stainless steel better preserved freshness. The high quality and safety of the wines were confirmed through physico-chemical, aromatic, and polyphenolic analyses. In parallel, cleaning protocols for the new materials were validated, and the optimal technological ripeness in the vineyard was assessed. Technical and consumer tastings revealed high acceptance of the oxidative-aged wines, supporting their profitability despite higher production costs.

The ViñOXs project was carried out from May 2022 to November 2024, with a total budget of €145,810.74, 80% of which was subsidized through the FEADER program (CMR MR311A). In addition to Paco & Lola as project leader, the project included EVEGA – AGACAL and MBG – CSIC as subcontracted research centers, providing technical, oenological, and analytical support.
